List of ingredients
- 2 croissants
- 120g cooked chicken
- breast
- 100g zucchini
- 50g feta
- 30g black olive
- Lemon yoghurt sauce:
- 40 g Greek yoghurt
- 1 tsp of lemon juice + lemon zest
- salt & pepper
- fresh herbs
Preparation steps
- Grill the chicken breast and cut into strips.
- Fry the zucchini with a drizzle of olive oil, salt and pepper
- until golden but still slightly crunchy.
- Mix all the ingredients for the lemon yoghurt sauce.
- Assemble the sandwich:
- Cut the croissant in half
- Spread the sauce on the croissant
- Add the zucchini and chicken strips
- Garnish with black olives
- Sprinkle with crumbled feta cheese
- Put the top on the croissant
- Serve warm with a colourful summer salad.
